Do you love pudding? I love it so much. Lucky for us, starting off the new year with health goals doesn’t mean we need to give up pudding! 

This Raw Vegan Persimmon Pudding is good for you, and you will feel good after you eat it. It is made with only five simple ingredients that you can actually pronounce, unlike most generic, store-bought puddings.

The main ingredients in this Raw Vegan Persimmon Pudding recipe are persimmons and bananas. When blended, they make the perfect pudding consistency. If you decide to freeze the bananas, you will end up with an ice cream consistency, which also tastes amazing. Persimmons are not in season for very long, so a lot of people miss out on this amazing fruit. It tastes like a cinnamon-flavored plum. Like all fruits, persimmons also have amazing health benefits. They support heart health, aid digestion, and are full of vitamins and nutrients—just fantastic in every way. 

This pudding will taste best if you use very ripe bananas (spotted) and persimmons (very soft). When fruit is ripe, it contains more health benefits, is easier to digest, and tastes way sweeter.

Raw Vegan Persimmon Pudding Recipe

Ingredients:

  • 5 organic ripe persimmons (any variety, I used Fuyu)
  • 2 organic ripe bananas
  • 1 tsp vanilla extract
  • 1 Tbsp cinnamon
  • Edible flowers (for garnish, optional)

Preparation:

  1. Cut off tops of the persimmons 
  2. Remove seeds of persimmons, if any
  3. Peel bananas
  4. Blend all ingredients in a high-speed blender
  5. Serve and garnish with edible flowers
