This delicious and flaky pastry is stuffed with fresh mangos and topped with a sweet and crunchy crumble.
The mango pie recipe was inspired by Cairnspring Mills and their dedication to the land. All of their flours are grown locally using sustainable and regenerative methods. We also love that they only use traditional milling processes, preserving flavors and nutrients in the best possible way.
The secret to a good pie lies in the crust, and the secret to a good crust lies in the flour. We decided to use Cairnspring Mills Organic Flour for this recipe. Its nutty and buttery taste makes this mango pie exquisite, giving it depth of flavor and richness. Not to mention the flour’s characteristic golden color, which feeds the eyes before you even take a bite.
For the filling, we wanted to choose something local and seasonal. Lucky for us, it’s mango season here in Panama! Everywhere you go, trees are bursting with bunches of ripe yellow fruit. Mango pie it is! We gave the question of filling no further thought and got busy in the kitchen.
So, here we have for you a beautiful and bright mango pie, wrapped in a tasty and buttery pastry, and topped with a sweet and crunchy crumble. We went ahead and served this delightful pie with this three-ingredient coconut whip.

Ingredients
For the crust:
- 250 grams (2 cups) Cairnspring Mills Organic Edison T85 Flour
- 113 grams butter (1 stick), cold and diced
- 3 Tbsp water
- 100 grams (¾ cup) powdered sugar
- 1 tsp ground flaxseed
- 1/4 tsp salt
For the crumble:
- 100 grams (¾ cup) Cairnspring Mills Organic Edison T85 Flour
- 55 grams butter (1/2 stick), cold and diced
- 50 grams (¼ cup) white sugar
- 50 grams (¼ cup) brown sugar
- Pinch of salt
For the filling:
- 4 large mangos, peeled and sliced
- 3 Tbsp brown sugar
- 1 tsp vanilla extract
- 1/4 tsp cinnamon (optional)
Preparation
For the crust:
- Make sure your butter is very cold before starting.
- Add all ingredients to a mixing bowl or food processor, and blend together until incorporated.
- Wrap the dough with plastic and chill in the fridge for 2 hours.
- Remove the chilled dough from the fridge and allow it to rest at room temperature for 5-10 minutes.
- Preheat your oven to 350 F / 180 C.
- On a lightly-floured surface, roll out the dough to fit your baking pan. Lift and turn the dough as you work, keeping the work surface dusted with flour to prevent sticking.
- Lay the dough in the pie pan, pressing firmly against the sides and bottom. Trim off any excess dough.
- Prick the bottom of the pie crust with a fork to avoid air bubbles breaking your dough.
- Bake for 10-15 minutes, set aside to cool.
For the crumble:
- Add all ingredients to a mixing bowl and with the tips of your fingers, start crumbling everything together. Make sure not to overwork the dough.
- Once you have your chunky crumble ready, place it in the refrigerator until ready for use.
For the filling:
- In a mixing bowl, toss your sliced mangos with sugar, vanilla and cinnamon. Taste and adjust sweetness and spices as needed. Set aside while you prepare to assemble your pie.
For the pie:
- Preheat your oven to 350 F /180 C.
- Add the sliced mangos to your pre-baked pie crust.
- Cover your pie with the chilled crumble and place in the oven for 30-45 minutes, or until the crumbles and edges of the pie are nicely golden.
- Once the pie is baked, take it out of the oven and let it rest for 15 minutes before plating.
- Optional: serve with a dollop of ice cream or whipped cream. Enjoy!
