“Lucumousse” is a raw, vegan mousse with a secret ingredient. I add lucuma to this simple and easy mousse to make it a fruity parfait. 

The vegan mousse recipe is made entirely from fruit (yes, avocados are a fruit too). Lucuma, the star ingredient in this four-ingredient show, is a fruit that tastes like a syrupy sweet potato. I used raw lucuma powder to give this vegan mousse its unique butterscotch-esque flavor. Adding berries turns it into a parfait from the heavens.

This was my first time using lucuma powder in a recipe, and I will definitely be using it again. Lucuma is a fruit native to Peru, Chile, Bolivia, and Ecuador. It has a thick consistency, similar to eggfruit. The powder can be added to smoothies, raw desserts like lucumousse, breakfast bowls, and more. 

The added dates and bananas make this mousse recipe perfectly sweet, and the avocados make it extra thick and creamy. I used raspberries and blueberries as some fruity additions to the parfait, but you can use any other fruit you desire. The mousse tastes good on its own, but I find the berries add hydration and tanginess to the thick mousse base. Bananas and avocados are dense and not very hydrating, so it’s nice to have the contrast.

Lucious Lucumousse Raw Vegan Recipe

Ingredients:

  • 2+ bananas
  • 2+ avocados 
  • 2 dates
  • 1+ Tbsp lucuma powder
  • 2 handfuls berries of your choice (optional)
  • 5 mint leaves (for garnish)

Preparation:

  1. Add all ingredients to a blender and blend until creamy.
  2. Add fruit and mint to the bottom of your serving dish.
  3. Spoon in mousse, add more fruit on top, and garnish with mint.
  4. Enjoy the flavor-packed experience!
